Mixed Vegetable Fried Rice

    This is my midweek savoury, mixed veg (as in the frozen mixed veg) fried rice that is surprisingly tasty and healthy with the addition of an egg and bacon.

    Serves: 4 

    • 1 small packet of frozen mixed vegetables
    • 4 tablespoons vegetable oil
    • 5 rashers bacon, diced
    • 1 small onion diced
    • 4 cups rice, cooked and cooled
    • 2 eggs, lightly whisked
    • fried onion, optional to serve
    • soy sauce, to taste

    1. Microwave or gently boil the frozen mixed vegetables to defrost and heat.
    2. In a wok add half the vegetable oil, bacon and onion; cook until the onion starts to soften. Add the rice and mixed veg and stir to heat through.
    3. Push the rice and veg away from the centre of the wok then add the remaining oil followed by the whisked egg, stir until it starts to scramble then slowly combine into the rice.
    4. When the egg is set add the soy sauce to taste and serve. Garnish with deep fried onion if desired.
