Broccoli Cheese

I like the way the broccoli and cheese sauce combine in this easy recipe that makes a good side dish or part of a vegetarian main.

Serves: 6 

  • 2 heads broccoli
  • 3 cups béchamel sauce
  • 1 cup grated cheddar cheese
  • 1 tablespoon diced parsley
  • 1/2 teaspoon paprika

  1. Boil or steam the broccoli until soft then drain and cool.
  2. Place a thin layer of béchamel sauce on the bottom of a ceramic or glass dish. Place florets of the broccoli on top then cover with the remaining béchamel sauce.
  3. Sprinkle the top with the grated cheese then the parsley and finely the paprika. Bake in an oven preheated to 220 degrees C until the cheese has melted and is starting to brown.
  4. Remove from the oven and serve immediately for a sloppy style presentation; or chill overnight and reheat for a firm piece that holds together well.
