I like the way the broccoli and cheese sauce combine in this easy recipe that makes a good side dish or part of a vegetarian main.
2 heads broccoli
3 cups béchamel sauce
1 cup grated cheddar cheese
1 tablespoon diced parsley
1/2 teaspoon paprika
- Boil or steam the broccoli until soft then drain and cool.
- Place a thin layer of béchamel sauce on the bottom of a ceramic or glass dish. Place florets of the broccoli on top then cover with the remaining béchamel sauce.
- Sprinkle the top with the grated cheese then the parsley and finely the paprika. Bake in an oven preheated to 220 degrees C until the cheese has melted and is starting to brown.
- Remove from the oven and serve immediately for a sloppy style presentation; or chill overnight and reheat for a firm piece that holds together well.
