Cannellini Bean, Tuna and Caper Spread

I serve this on a bed of lettuce or in a wrap. Its nutritious with tuna and beans and I love its fresh Mediterranean flavour. Also a good dip!


Serves: 8 

  • 185g tin tuna, drained and flaked
  • 1/2 red capsicum, chopped
  • 1/2 onion, chopped
  • handful chopped coriander leaves
  • 2 tablespoons capers
  • 1/4 cup sliced gherkins
  • 125g mayonnaise
  • 1 clove garlic, chopped
  • 125g Dijon mustard
  • 420g can cannellini beans, drained and rinsed
  • handful chopped parsley to serve

  1. In a food processor, blend the tuna, capsicum, onion, coriander, capers, gherkins, mayonnaise, garlic and mustard until smooth. Transfer to a bowl, and mix in the white beans. Garnish with parsley to serve.
