Rich Cherry Slice

    I love this slice recipe that is rich with cherry and coconut flavours over a chocolate base but still easy to make at home.

    Serves: 12 

    • Base
    • 1 cup chocolate biscuit crumbs
    • 100g butter, room temperature
    • 2 tablespoons icing sugar
    • Cherry Layer
    • 200g glace cherries
    • 1 (400g) tin condensed milk
    • 125g copha
    • 4 cups desiccated coconut
    • pink food colouring, as required
    • Garnish
    • 150g chocolate

    1. Base: Mix together biscuits crumbs, butter and icing sugar until well combined. Spread on the bottom of a lined square cake tin.
    2. Cherry Layer: Place the cherries in a processor and pulse until the cherries are finely chopped. Add to a bowl.
    3. Add the condensed milk and copha and combine, add the coconut in patches stirring in well each time. Add the pink food colouring as required to get the desired colour.
    4. Lay the cherry coconut mixture on the chocolate base.
    5. Garnish: Melt the chocolate over a double boiler then drizzle over the top of the cherry layer.
    6. To Serve Refridgerate the slice until cold, about 2 hours, then slice and serve.
