Clean pork fillet, trim fat off, and square of ends and sides so it is nice and even.
Slice fillet into 3 long lengths.
Peel and slice apple into 5mm thick discs.
Plait the three fillet strips, as you take the left strap over the centre, poke a prune under the meat, and as you take the right strap over the center, place a piece of apple in too.
Insert a skewer from end to end to hold it all together.
Drizzle olive oil over it.
Place the 1/2 round slices of orange on the top and sprinkle with sesame seeds.
Cover loosely with tin foil, and roast until cooked (about 20 minutes).
