Braided Pork with Prunes

    A simple but tasty recipe I created one evening after getting out a whole pork fillet and not finding anything to do with it.

    Serves: 4 

    • pork fillet, whole
    • prunes
    • apple
    • orange
    • sesame seeds

    Preparation:30min  ›  Cook:20min  ›  Ready in:50min 

    1. Clean pork fillet, trim fat off, and square of ends and sides so it is nice and even.
    2. Slice fillet into 3 long lengths.
    3. Peel and slice apple into 5mm thick discs.
    4. Plait the three fillet strips, as you take the left strap over the centre, poke a prune under the meat, and as you take the right strap over the center, place a piece of apple in too.
    5. Insert a skewer from end to end to hold it all together.
    6. Drizzle olive oil over it.
    7. Place the 1/2 round slices of orange on the top and sprinkle with sesame seeds.
    8. Cover loosely with tin foil, and roast until cooked (about 20 minutes).
