Quick Smoked Fish Pie

    A quick easy way of preparing a smoked fish meal. We smoke our own fish and at certain times of the year the freezer is overflowing so we look for different ways to prepare it as meals. This one was made up in a rush of what was in the cupboards.

    Serves: 4 

    • one large smoked fish fillet or equilavent - flaked
    • one medium onion - diced
    • one can of chopped tomatoes
    • herbs - your preference, I tend towards basil and oregano
    • 2 slices of stale bread - crumbed
    • finely grated cheese

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Lightly fry the onion.
    2. Add the fish to the onion and heat through.
    3. Add the tomatoes and herbs to the pan. Simmer until the liquid is slightly thicker, maybe 5 min.
    4. Place the fish mixture in a baking dish, cover with the bread crumbs then sprinkle the cheese on top.
    5. Grill until cheese melts and bread crumbs are golden.


    I find a 20x18cm dish fits the recipe nicely and it feeds our small family (2 adults +5yo and 3yo)
