Poached Summer Fruit

    Celebrate the fresh fruit available this summer with beautiful poached fruit. Serve at room temperature with vanilla ice cream.

    Ingredients
    Serves: 2 

    • 1/2 cup water
    • 1/4 cup caster sugar
    • 1/2 teaspoon vanilla essence
    • 1 peach, sliced in quarters
    • 1 nectarine, sliced in quarters
    • 4 small apricots, halved
    • 1/2 pomegranate (seeds only)

    Directions
    Preparation:5min  ›  Cook:35min  ›  Ready in:40min 

    1. Dissolve sugar in water over medium heat, about 2 minutes. Increase heat to high and boil three minutes.
    2. Carefully add vanilla essence and cut fruit to syrup and cook 30 minutes. Turn off heat, add pomegranate seeds and allow to cool.
