Mocha Chocolate Mousse

    There is nothing better than a rich chocolate mousse to end a meal. This version is perked up with a shot of coffee liqueur.

    • 200g dark chocolate
    • 4 eggs, separated
    • 1 shot coffee liqueur
    • 300ml thickened cream

    1. Melt the chocolate in the microwave in 30 second stints, stirring between each to make sure it doesn’t burn.
    2. When the chocolate has cooled slightly stir in the egg yolks and coffee liqueur.
    3. Beat the cream in a fresh bowl until soft peaks form then fold it into the chocolate mixture. Transfer the mousse to the serving dishes and refrigerate until ready to serve.
