Wheatgerm Honey Bread

    I make this super healthy bread in the bread machine which makes it very easy. It's sweetened with a little honey.

    Serves: 10 

    • 150g bread flour
    • 150g wholemeal flour
    • 4 tablespoons porridge oats
    • 2 tablespoons wheatgerm
    • 2 tablespoons honey
    • 200ml skim milk
    • 100ml water
    • 1 teaspoon salt
    • 1 tablespoon butter
    • 1/2 teaspoon dry yeast

    Preparation:5min  ›  Cook:3hours  ›  Ready in:3hours5min 

    1. Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select the multigrain setting and press Start.

    I don't use a bread machine, so I let this rise for 1.5 hours first, then put it in a 9x5 pan and let it rise for another hour. I doctored it a bit, adding 1/8 c. gluten and 1/4 c. ground flax. I had to add a little more flour--about 1/2 c. The loaf rose perfectly, had an open, light crumb, and was slightly sweet.
