Tasty little mini quiches are made with bacon, egg and cheese. Baked without a crust, they are so quick and easy. Great for parties and last minute guests to.

Serves: 24 

  • 3 eggs, whisked
  • 4 rashers of bacon, diced
  • 1 small onion, grated
  • 1/4 cup of tasty cheese, grated
  • salt and pepper, to taste
  • dash of thickened cream

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Pre-heat your oven to 180 degrees C. Lightly grease 2 patty cake pans with cooking spray.
  2. In a bowl, mix the eggs, bacon, onion, cheese, salt, pepper and cream with a fork until all mixed together well. Pour mixture into the trays.
  3. Bake in the oven for 15 - 20 minutes or until golden brown.

These were beautiful. Served them at a party and were gone in minutes. They looked really big and puffy when they came out but flattened once they were out of the oven. Tried second time and cooked them for 15 minutes then turned off the oven and left them in for 5 minutes while the oven cooled. When i took them out they were much better.
