Capsicum Scrambled Eggs

This is a quick breakfast, brunch or lunch I make. Scrambled eggs can get a bit boring so I add capsicum then serve on toast.

Serves: 2 

  • 30g butter
  • 1/2 onion, diced
  • 1/2 red capsicum diced
  • 4 eggs, whisked
  • 2 tablespoons milk
  • salt and pepper, to taste

Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

  1. Add the butter to a medium saucepan over a low heat. When the butter is melted add the diced onion and capsicum then cook until soft.
  2. Add the whisked eggs and milk stiring continually, cook to desired consistancy, I like mine to be a little dry. Season with salt and pepper to serve.
