Tomato and Goats Cheese Stack

This is a simple summer recipe that can be a healthy lunch or dinner entree. It is so simple you will have no reason for it not to become a regular.

Serves: 4 

  • Dressing
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 1/2 tablespoons of raspberry vinegar
  • 2 teaspoons Dijon mustard
  • 2 teaspoons freshly diced basil
  • 2 teaspoons sugar
  • Stack
  • 8 tomatoes fully ripened
  • 150g goats cheese, thickly sliced
  • 1/4 cup of walnuts, toasted

Preparation:15min  ›  Ready in:15min 

  1. Dressing Combine the olive oil , garlic, raspberry vinegar, Dijon mustard, basil and sugar and set aside until needed.
  2. Stack Place a piece of tomato with cheese on top then sprinkle with some walnuts and the dressing then add another level of tomato, cheese, walnuts and dressing; repeat this 4 times then move on to the next stack.
