Nutty Granola

    Sugar free, delicious, filling and healthy. Eat this with yoghurt and grated apple, or sliced banana etc.

    Serves: 2 

    • 3 tablespoons coconut oil (find this at a health food store)
    • sweetner if required - I use sucaryl liquid, approx 10 drops
    • 4 cups of coconut flakes
    • 3 tablespoons chia seeds (white) (find these at a health food store)
    • 1 1/2 teaspoons cinnamon
    • 2 1/2 to 3 cups roughly chopped nuts (pepitas, cashews, almonds, pecans, walnuts etc) you can also use seeds such as pumpkin, sunflower seeds too.

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Melt (if needed) the coconut oil and mix in the sweetner if you are using it.
    2. Add all ingredients to a bowl and pour over the coconut oil mix, stir to coat.
    3. Pour into a baking tray lined with baking paper.
    4. Bake in a pre-heated oven at 120 degrees C for approx 25-30 minutes, taking care to stir to prevent edges buring.
