Cold Soba Noodles with Lemon Vinaigrette

    Japanese soba noodles make a great cold salad for a hot day. This dressing is very piquant with lemon and wasabi.

    Serves: 4 

    • 500g soba noodles
    • 3 French shallots, diced
    • 100ml rice vinegar
    • 100ml vegetable oil
    • 80 dark soy sauce
    • 1 teaspoon instant dashi dissolved in 180ml hot water
    • zest of three small lemon
    • wasabi to taste
    • Garnish
    • pickled ginger
    • 2 avocados, thinly sliced
    • 1 teaspoon black sesame seeds

    1. Cook the noodles in boiling water until cooked right through, about 4 minutes. Drain and rinse with cold water. Lightly toss in a little vegetable oil and store in the fridge.
    2. For the dressing:

    3. Mix together shallots, rice vinegar, vegetable oil, soy sauce, dashi, lemon zest and wasabi to taste.
    4. When ready to serve, toss noodles gently in dressing. Place on individual plates. Garnish with avocado, pickled ginger and sesame seeds.
