Winter Wassail

    In the Northern Hemisphere this hot cider is traditionally drunk at Christmas and New Years, but it's just a great winter warmer as well.

    Serves: 32 

    • 1 1/2 cups (300g) caster sugar
    • 8 whole cloves
    • 3 cups (750ml) water
    • 3 cinnamon sticks
    • 1 1/3 cups (350ml) orange juice
    • 1 cup (250ml) lemon juice
    • 12 cups (3 litres) apple juice

    Preparation:10min  ›  Cook:20min  ›  Extra time:1hour cooling  ›  Ready in:1hour30min 

    1. In a saucepan, combine the sugar, cloves, water and cinnamon. Bring to the boil and continue to boil for 10 minutes. Remove from heat, cover and allow to cool for 1 hour.
    2. Stir in the orange juice, lemon juice and apple juice. Return to the heat and boil for 10 to 15 minutes. Remove cloves and cinnamon sticks before serving.

    I love making this recipe during the holiday season. In mid October, my family and I pick apples and we have an apple press made in the 1800's and we press our own apples to get apple cider and we use apple cider instead of apple juice and it is very delicious!!  -  10 Sep 2003  (Review from Allrecipes USA and Canada)
