Balsamic Bread Salad

    Serves: 2 

    • Day old bread
    • 4 tomatoes
    • 1 red onion
    • 1/2 cucumber
    • Olive oil
    • Balsamic vineger
    • salt & pepper

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cut the day old bread into cubes (15mm).
    2. Place bread into a roasting tray and put into a moderate oven for 10 to 15 mins. Give the pan a shake half way through.
    3. Remove from the oven and allow to cool.
    4. Slice the onion and cucumber, place in to a salad bowl.
    5. Cut tomatoes into pieces, add to the cucumber and onion.
    6. Top with the toasted bread.
    7. Pour equal quantities of olive oil and balsamic vinegar over the salad (the bread will soak up a lot of the dressing).
    8. Season to taste, and serve.
