Easy Tuna and Potato Croquettes

    A quick easy way to do a classic. There are no set ways to make these, I usually make them when we are at the end of a shopping period, and will add anything that is lying around..

    Serves: 2 

    • potatoes
    • tinned tuna
    • corn (tinned, frozen or fresh)
    • peas (frozen or fresh) tinned peas do not work well
    • 1 egg
    • bread crumbs

    Preparation:30min  ›  Cook:10min  ›  Extra time:30min chilling  ›  Ready in:1hour10min 

    1. Peel and boil potatoes then mash.
    2. Drain tinned tuna, add to potato.
    3. Add peas and corn (broccoli and cauliflower work well too).
    4. Add egg.
    5. Add any seasoning, herb or spices to taste.
    6. Combine ingredients.
    7. Roll into short, fat sausage shapes.
    8. Roll in breadcumbs, place in fridge for 15- 30 mins.
    9. Deep fry until golden brown.
    10. Serve with fresh salad, or cous cous.


    This recipes is open to so many variations.... any left over vegetables find their way into this recipe.
