What to do with the milk when it needs to be used up and you have left over rice. Turn it into a delicious filling breakfast dish.

Serves: 4 

  • 1-2 cups of cooked rice (white or brown does not matter)
  • 3 cups of milk
  • zest of one lemon
  • pinch of salt
  • 1 tablespoon raw honey
  • 1 tablespoon unrefined brown sugar
  • 1 cup frozen berries

Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Place rice and milk in saucepan and heat slowly. Keep an eye on it when it does the initial boil and make sure you turn heat right down.
  2. Add the lemon zest at the beginning of the cooking.
  3. When rice is done, stir through the salt, honey and sugar.
  4. Serve into bowls and top with berries of your choice..
  5. You can add a dash of cream if you wish.
  6. Serves 4-6 and takes about 20 minutes to prepare.


I love raspberries so have chosen them as you can see from the photos.

I enjoyed this for a change for breakfast after a particularly tough training session where I needed to boost my carbs and have something sweet. The sugar gives the milk a caramel flavour. Looks good too. - 25 Jan 2013
