Lunchbox Fruit Rollups

Ok, keeping with the theme of my resolution to make more lunchbox items as opposed to prepackaged foods full of preervatives and chemicals, fresh, fun food made in our home.

Serves: 2

  • 2 1/2 – 3 cups ripe or slightly over-ripe diced fruit
  • sweetener to taste: honey, sugar or agave
  • 2 teaspoons fresh citrus juice
  • 4 tbsps chia seed
  • Choice of seasoning such as cinnamon. Or go without. I especially like cinnamon and nutmeg when I do apple roll-ups.

  1. Preheat oven to lowest temperature. Puree all ingredients in a food processor until smooth (or use a hand blender). Pour onto a baking sheet lined with silicone baking mat or baking parchment that has been sprayed with non-stick and spread to 1/8″ (3mm) thick. Place in oven and bake for 6-8 hours, until centre is not tacky anymore. Cut into strips and roll. Store in airtight container or freeze.

The addition of sugar or honey enhances the texture and makes the fruit roll ups a little more chewy than if you leave it out.
