Black beans and sweet potatoes are spiced with chillies, cumin and garlic, then grilled for a great vegetarian main or burger. They can also be fried. These black beans are not the Asian black beans in sauce but the Latin American-style black beans.
2 tablespoons olive oil
4 spring onions, thinly sliced
6 cloves garlic, finely chopped
2 green chillies, finely chopped
1 tablespoon ground cumin
800g canned black beans or red kidney beans, drained and rinsed
salt and freshly ground black pepper to taste
280g grated raw sweet potato
1 egg, lightly beaten
4 tablespoons dried breadcrumbs
Lime sour cream dressing
1/2 cup light sour cream
2 teaspoons lime juice
1 small green chilli, finely chopped
salt to taste

To prepare Lime Sour Cream Dressing, mix the sour cream, lime juice, chilli and salt together in a small bowl. Cover and chill.
To make the patties, heat half the olive oil in a small frying pan over medium heat. Cook spring onions until softened, about 1 minute. Stir in garlic, chillies and cumin and cook until fragrant, about 30 seconds.
Transfer onion mixture to a large bowl. Stir in black beans and mash with a fork. Season to taste with salt and pepper. Add sweet potato, egg and breadcrumbs to form a stiff mixture. Divide into 8 balls, and flatten into patties.
Preheat grill. Lightly grease baking tray with the remaining oil.
Place patties on the tray and grill for 8 to 10 minutes. Turn cakes over, and grill until crisp, about 3 minutes more. Serve with Lime Sour Cream Dressing.

I brought this to a very foodie bring-a-dish party and it was the first dish gone. People loved it! I added about a 1/4c chopped red capsicum and a small can of diced green chillis which i think was perfect. Also to the lime sour cream i added a bout a 1/2 tablespoon chopped coriander and a couple tablespoons finely chopped red capsicum for colour. - 29 Sep 2008
