Broad Bean and Fetta Bruschetta

This is a great way to use broard beans to add a new spin to an old favourite of bruschetta. Definitely worth a try and works well with home-grown fresh broad beans too.

Serves: 6 

  • 1 stick French bread
  • 500g frozen broad beans
  • 50g sun dried tomatoes
  • 50g green olives
  • 2 tablespoons mint
  • 1 clove garlic, crushed
  • 2 tablespoons lemon juice
  • 2 teaspoons olive oil
  • 75g fetta

Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

  1. Cut the French stick into 2cm slices then grill both sides until lightly browned.
  2. Bring the broad beans to a boil then when starting to soften strain and cool.
  3. In a blender process the dried tomatoes, olives, mint and garlic. Add the broad beans, lemon juice and olive oil, then process to your preferred consistency.
  4. On each grilled slice of bread spread the broad bean mix then crumble and sprinkle with the fetta to serve.
