Freckle Men Gingerbread

Though I like to make gingerbread men I usually find I have biscuits left over; then I started to add freckles, now they are all gone every time.

Serves: 12 

  • 100g brown sugar
  • 125g softened butter
  • 200g golden syrup
  • 350g plain flour
  • 2 teaspoons ground ginger
  • 1 teaspoon bicarb soda
  • 1 packet of freckles

  1. Preheat the oven to 180 degrees C.
  2. In a bowl beat together the sugar and butter using electric beaters until light and creamy.
  3. Add the golden syrup then sift in the flour, ginger and bicarb soda.
  4. Mix until a rough crumb begins to form then work the mixture into a smooth dough using your hands. Refrigerate the dough for 10 minutes or until firm.
  5. Roll out the dough between two sheets of plastic wrap or baking paper (not a floured surface). Continue until about 4mm thick.
  6. Cut out the men shapes using a biscuit cutter. Place onto a non stick baking tray at least 1cm apart.
  7. Bake for 8-10 minutes until golden brown. As soon as they come out of the oven place a freckle in the centre of each man. Let cool on trays for a minute or two before removing to cool completely on cake racks.
