Fetta and Sundried Tomato Appetizer

This is a simple combination of fetta and sundried tomatoes with a few herbs and similar to give it a bit of zing.

Serves: 4 

  • 30ml quality vinegar
  • 15ml olive oil
  • 1 tablespoon diced fresh mint
  • 1 tablespoon diced fresh basil
  • 1/2 tablespoon diced chilli
  • 1 block fetta
  • 1 cup sundried tomatoes

  1. In a glass or ceramic bowl combine the vinegar, oil, mint, basil and chilli. Leave as long as possible up to 4 hours to allow the flavours to combine.
  2. Dice the fetta into 1cm square pieces, cut the tomatoes if you feel they are too big. Combine with the vinegar/oil mix and chill at least 30 minutes. Stir one more time before serving.
