Sometime the simple things are the best, and I got a great photo so had to share. This is the timeless breakfast of eggs on toast.

Serves: 1 

  • 2 slices fresh bread
  • butter
  • 1 tablespoon oil
  • 2 eggs
  • finely diced parsley, optional

Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Cut the bread into the largest thickness that goes in the toaster. Toast until golden brown then butter.
  2. In a moderate frypan add a small amount of oil then crack in the egg. Add a lid over the egg so the top cooks at the same time. When the egg is cooked to your preferred doneness, serve on the toast. Garnish with the parsley if desired.
