Chicken and Miso Broth

    I love this simple Japanese style soup recipe, once I found miso paste I have never looked back and don’t need to go to restaurants to eat soup anymore.

    Serves: 6 

    • 4 litres chicken stock
    • 1/4 cup miso paste
    • 50g ginger
    • 1/4 cup soy sauce
    • 500g udon noodles
    • 1 carrot grated, or very thinly sliced
    • 4 spring onions, thinly sliced
    • 2 sheets of nori, thinly sliced

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Bring the chicken stock to the boil then add the miso, ginger and soy sauce and simmer for 5 minutes.
    2. Add the noodles, carrot, spring onion and nori strips and simmer for an extra 5 minutes before serving.
