Easy Beetroot Cake

    I was really impressed with this cake and had to get the recipe, I like that by using raw beetroot you get the bright red colours speckled through it rather than the whole cake turning red.

    Ingredients
    Serves: 12 

    • 4 eggs
    • 2 cups (440g) sugar
    • 1 cup (250ml) oil
    • 2 cups (250g) sifted flour
    • 2 teaspoons bicarb soda
    • 2 teaspoons salt
    • 2 packed cups grated beetroot
    • 1 cup saltanas

    Directions
    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Beat eggs, add sugar and oil. Stir in flour, bicarb soda and salt. Add beetroot and sultanas then mix.
    2. Bake in an oven preheated to 180 degrees C until cooked through; about 30 minutes.

    Love the easy recipe and the photo but I thought it was a wet batter. Sure enough, it was a REALLY wet cake. Will persevere with this one 😕  -  09 Jul 2017
