A quick and simple vegetable frittata. You can use any veggies you like, these are just what I had lying around.

Serves: 4 

  • 6 eggs
  • 1/2 cup milk
  • 3 tablespoons parmesan cheese, grated
  • 1/4 cup chopped parsley
  • salt and pepper
  • olive oil for frying
  • 1 onion, chopped
  • 1 zucchini, chopped
  • 1 red capsicum, chopped
  • 6 stalks asparagus, chopped
  • 1 parboiled potato, cut into wedges

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. In a bowl combine eggs, milk, parmesan, parsley and salt and pepper. Set aside.
  2. Preheat oven to 180 degrees C.
  3. Heat oil in an oven-safe frypan and fry onions until brown. Add vegetables and cook for two or three minutes. When vegetables are almost cooked, transfer to a baking dish, add egg mixture, allow to cook for two minutes on the stove then bake in the oven for 7 to 10 minutes, until cooked.
