Fruit and Nut Pilaf

    A beautiful sweet and savoury pilaf with dried fruits, goes very well with a hot stew and pita breads.

    Serves: 4 

    • 75g sultanas
    • 175g dried fruits (apricots, apples, pears etc)
    • 1 tablespoon sweet sherry
    • 75g butter
    • 1 onion, finely chopped
    • 250g cooked long grain rice
    • 1/2 teaspoon allspice
    • salt and pepper
    • 50g flaked almonds

    1. Preheat oven to 190 degrees C.
    2. Put sultanas and dried fruit in a bowl and sprinkle with sherry, then cover with water. Leave to soak 4 hours. Drain and chop the fruit.
    3. Melt the butter in a frying pan and add onion and fry until softened. Stir in the cooked rice and allspice, salt and pepper.
    4. Fold in the fruit and almonds and turn the mixture into a greased casserole. Bake for 30 minutes.
