Zucchini Pikelets

    Here's a fun way to get some vegies into your kids! Watch this recipe being made in the Allrecipes Zucchini Pikelets Video.

    Serves: 4 

    • 500g zucchini, peeled and grated
    • 1 egg
    • 3 to 4 tablespoons unrefined caster sugar
    • 1/2 teaspoon salt
    • 60g plain flour
    • vegetable oil, for frying

    Preparation:10min  ›  Cook:15hours  ›  Ready in:15hours10min 

    1. Combine the zucchini, egg, sugar, salt and flour. Mix until well combined.
    2. Heat a drizzle of oil in a frying pan over medium high heat. Spoon pikelet batter into pan, using about a tablespoon of batter for each pikelet. Cook a few minutes until browned on one side, then flip and cook the other side.
    3. Serve with cream, if desired.

    I liked these, but the family thought they were, and I quote, 'weird', lol. I served these drizzled with honey and topped with whipped cream. I don't know if I could eat these as a dessert or something that I would make all the time, but they were fun to try and tasty.     just made this...i cooked the pancakes for way longer than 2 minute per side, and the insides of the thin pancakes were still raw. e. if i could figure out how to cook them all the way trough without burning the outsides, they might taste good!  -  10 Jul 2016  (Review from Allrecipes USA and Canada)
