Yummy Vegie Spaghetti

    It was my first time making it and i didn't have the time to find a recipe or go to the shop so i just used what i had in the fridge. I didn't have much faith in it to begin with but it truly is a quick and totally yummy dish. Enjoy!!!

    Serves: 4 

    • 1 packet spaghetti strings
    • 2 tablespoons olive oil
    • 1 large brown onion, diced
    • 1 medium eggplant, chopped
    • 2 zucchinis, chopped
    • 200g mushrooms, chopped
    • 1 teaspoon minced garlic
    • 1 teaspoon minced ginger
    • 1 400g tin diced tomatoes
    • pinch of salt and pepper
    • 1 teaspoon chopped corriander
    • 1 cup grated cheddar cheese

    1. Boil spaghetti strings in a saucepan.
    2. Meanwhile, heat oil in a frying pan. Place the onion and eggplant in cook, stirring, for 3-4 mins or until onion is soft. Add zucchini and mushrooms, cook, stirring, until mushrooms are brown. Add garlic and ginger, stir for a further 3 mins. Pour in tomatoes and add salt and pepper. Turn down heat to low, continually stirring until pasta is ready.
    3. Drain pasta and place on a plates. Pour over sauce and sprinkle with cheese.
