It was my first time making it and i didn't have the time to find a recipe or go to the shop so i just used what i had in the fridge. I didn't have much faith in it to begin with but it truly is a quick and totally yummy dish. Enjoy!!!
Meanwhile, heat oil in a frying pan. Place the onion and eggplant in cook, stirring, for 3-4 mins or until onion is soft. Add zucchini and mushrooms, cook, stirring, until mushrooms are brown. Add garlic and ginger, stir for a further 3 mins. Pour in tomatoes and add salt and pepper. Turn down heat to low, continually stirring until pasta is ready.
Drain pasta and place on a plates. Pour over sauce and sprinkle with cheese.
