Cherry Meringue Desserts

    A really nice dessert for a summer dinner party.

    Serves: 4 

    • 1/2 cup caster sugar
    • 2 teaspoons vanilla extract
    • 1 cinnamon stick
    • 300g cherries, pitted, halved
    • 300ml double cream
    • 4 meringue nests, roughly crushed
    • small fresh mint leaves to serve

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Combine sugar and 1/2 cup warm water in a sauce pan over low heat and cook, stirring, until sugar is dissolved. Increase heat to medium-high. Simmer for 1 min. Remove from heat. Discard cinnamon. Allow to cool completely.
    2. Combine cream and meringue in a bowl. Spoon half the cream mixture. Put into four glasses top with half top with cherry mixture
