Apple, Walnut and Date Crumble

    This is a lovely crumble served hot or warm with either cream or vanilla ice cream. Dates and walnuts add interest to the standard apple crumble.

    Serves: 4 

    • 3 large apples, Gala or Granny Smith, peeled and cored
    • 2 tablespoons brown sugar
    • 1 tablespoon lemon juice
    • 1/4 cup water
    • 30g butter
    • 8 pitted dates, chopped
    • 1/4 cup roughly chopped walnuts
    • Crumble topping
    • 1/2 cup wholemeal flour
    • 1/4 cup desiccated coconut
    • 1/4 cup brown sugar
    • 60g butter

    1. Preheat oven to 190 degrees.
    2. Combine the apples in a saucepan with the sugar, lemon, water and butter and bring to a simmer. Cover and cook until tender.
    3. Add the dates and walnuts, stir, and place in a small baking dish.
    4. Mix the flour with the coconut and sugar. Melt the butter and pour over the flour mixture. Stir well. Scatter the crumble evenly over the top of the fruit.
    5. Bake about 25 minutes or until the topping is just getting crisp. Serve hot with ice cream.
