Advocaat is a traditional Dutch drink for cold weather. It is thick enough to eat with a spoon or be used to top waffles.
Makes: 1 litre
10 eggs (free range organic are best)
1/2 teaspoon salt
1 1/4 cups white sugar
2 cups brandy
2 teaspoons vanilla
- Using an electric beater beat the eggs with the sugar and 1/2 teaspoon salt until thick and creamy. Add brandy slowly, beating constantly.
- Pour into a double saucepan and stir with a wire whisk over simmering water until warm and thick. Do not allow to boil. Remove from the heat and stir in vanilla.
- Serve in small glasses with spoons.
