Tokelauan Green Bananas

    Green bananas in coconut cream. When served with sugar, they make a great dessert, when served with diced onion, they make a mean side dish. Yummy!!!

    Serves: 8 

    • 8 green bananas, peeled
    • 1 (400g) tin coconut cream
    • sugar, to taste

    1. In a saucepan, cover bananas with water then boil until soft. Drain. In a separate saucepan, heat coconut cream with sugar to taste. Pour over the bananas to serve.


    If you are more keen on savoury than sweet, don't add the sugar, but add 1/4 of a diced onion to the coconut milk instead and serve as a side dish.


    Cut though the skin lengthwise without cutting the banana. You may have to use the back of a knife or a spoon handle to peel the bananas.
