Savoury Taro in Coconut Cream

    Delicious taro root poached and then served in hot coconut cream with onions and salt. A Samoan dish that is great with fish and fried bread. Yummy.

    Serves: 4 

    • 500g fresh taro, cut into chunks
    • 1 large onion, diced
    • 1 1/2 cups coconut cream
    • salt, to taste

    1. In a large saucepan cover taro with water. Bring to a boil then allow to boil for about 30 minutes. Drain taro and reserve cooking water.
    2. In a separate saucepan combine onion and coconut cream. Add in the drained taro. If sauce is to thick, stir in 2/3 cup of the cooking water.
    3. Cook slowly for about 5 minutes, season to taste then serve.
