Corned Beef Pie

This pie is quick and easy if you use tinned corned beef and left over mashed potatoes. It's loaded with your favourite mixed vegetables and cooked until golden.

Serves: 6 

  • 1 (340g) tin corned beef, diced
  • 1 onion, diced
  • 1 1/2 cup frozen mixed veggies
  • salt and pepper, to taste
  • 150ml stock
  • 2 cups cooked mashed potatoes
  • 2 tablespoons butter, diced

Preparation:25min  ›  Cook:40min  ›  Ready in:1hour5min 

  1. Preheat oven to 180 degrees C.
  2. Combine beef, onion and mixed veggies. Season with salt and pepper. Cover with stock then spoon over the mashed potatoes.
  3. Cover then cook for 30 minutes. Remove cover, sprinkle on butter, then return to the oven for 10 minutes more.


Use leftover mashed potatoes if you have them, if not, just make a few. If you have leftover corned beef, use 340-400g of that in place of the tinned kind.
