Honey Rice Bubble Slice

    Butter, honey and sugar all combined with rice bubbles then sliced into bars. Such an easy treat for school fetes, kids lunch boxes and after school snacks.

    Makes: 18 bars

    • 125g butter, chopped
    • 1/2 cup (110g) caster sugar
    • 2 tablespoons honey
    • 1 teaspoon vanilla essence
    • 5 cups rice bubbles

    Preparation:10min  ›  Cook:5min  ›  Extra time:1hour cooling  ›  Ready in:1hour15min 

    1. Line a 20cm x 30cm slice tin or baking dish with baking paper.
    2. Stir butter and sugar in a small saucepan over medium-high heat until sugar dissolves. Bring to a boil. Stir in honey then boil for about 4 minutes. Stir in vanilla then remove from heat.
    3. Place rice bubbles in a large bowl then pour in butter mixture. Mix well. Spoon into prepared tin. Press down flat with a rubber spatula then allow to set before slicing.
