    The easiest yummiest dish in the world to make, and incredibly nutritious and low fat. This dish was passed onto me by a friend when I mentioned I was trying to be vegetarian. She said that her teenage sons were really lazy, but loved making this dish. It tastes DELICIOUS and can be made in 5 - 10 minutes as a cooked lunch or quick dinner.

    Ingredients
    Serves: 2 

    • 2 cups of spinach, chopped coarsely
    • 1/2 cup of cherry or roma baby tomatos, chopped in half
    • 4 slices of haloumi cheese
    • 1 onion, sliced finely
    • 1 medium size clove of garlic, chopped finely or minced/pressed
    • 3 button mushooms, sliced (or other mushrooms of your choice, you can skip this if you don't like mushrooms)
    • juice of 1/2 squeezed lemon
    • a tablespoon of virgin olive oil
    • a teaspoon of butter

    Directions

    1. Heat tablespoon of oil in a frying pan.
    2. Throw the chopped onion and garlic into frying pan and stir until translucent.
    3. Throw in mushrooms for about 3 minutes until you think they're nearly cooked (can skip this step if you don't like mushrooms).
    4. Add in the tomatos and cook for about 2 or 3 minutes.
    5. Add in the spinach and stir fry until wilted and cooked through.
    6. Transfer to a plate.
    7. Add a teaspoon of butter to the pan and pop in the sliced haloumi. Cook on a high heat about 2 minutes on each side (check that it is golden brown on each side - that means it's ready).
    8. Scatter the haloumi cheese on top of the spinach, tomato, onion, mushroom salad.
    9. Drizzle with fresh squeezed lemon juice and garnish with salt and pepper. Enjoy!
