Pineapple Dream Pie

    This heavenly creamy pineapple dessert is set on a base of biscuit crumbs then chilled in the fridge until set. There are really no words to describe how amazing it is.

    Serves: 8 

    • 1 1/4 cup crushed wine biscuits
    • 120g butter, softened
    • 1 cup icing sugar
    • 2 eggs
    • 1 (500g) tin crushed pineapple, well drained
    • 240ml cream

    1. Combine 1 cup of the biscuits with 60g of the butter, melted. Press into the bottom of a pie dish or flan tin.
    2. Cream together the remaining butter and the icing sugar. Beat in the eggs, one at a time, until thick. Spread over the base with a spatula.
    3. Spoon over the pineapple then the whipped cream. Sprinkle on the remaining biscuit crumbs. Refrigerate for 4 hours until set.
