Raw Fish

    Most islands have their own version of raw fish in coconut cream. This is one and I can not remember where it originates, the cook islands perhaps?

    Serves: 6 

    • 1kg boneless tarakihi or cod, cut in cubes
    • 1 cup lemon jucie
    • 400ml coconut cream
    • 1 spring onion, diced
    • 1 teaspoon salt, to taste
    • 3 radishes, sliced
    • 1 tomato, diced
    • 1/4 cucumber, sliced

    Preparation:15min  ›  Extra time:4hours curing  ›  Ready in:4hours15min 

    1. In dish, add fish and lemon juice. Refrigerate for 4 or more hours.
    2. Drain off the lemon juice then stir in coconut milk, salt and spring onion. Stir in radishes, tomato and cucumber to serve.

    I have been making raw fish for ever. (it isn't raw at all. It's cook with the acid of the lemon/lime juice. Just for you that don't know. You can cook with heat , acid or microwave. This dish is cooked with acid). I also add a slice or mashed hard boiled egg on top. Yummmmmmmmm  -  05 Apr 2014
