Tomato Bacon and Egg Pie

    Tasty bacon and egg pie with cheese, onion and tomato in a shortcrust base makes a mean dinner that is quick and easy as to prepare.

    Serves: 4 

    • 1 sheet shortcrust pastry
    • 8 eggs, lightly beaten
    • 6 slices bacon, diced
    • 1/2 large onion, sliced
    • 1 cup cheese, grated
    • 1 tomato, sliced
    • pepper, to taste

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 220 degrees C.
    2. Line a pie dish with the shortcrust pastry. sprinkle in the onion. Sprinkle in the cheese. Pour in the eggs, then sprinkle in the bacon. Top with the tomato slices. Sprinkle with pepper.
    3. Bake in the preheated oven for 30 minutes, until set. Slice and enjoy.

    Tastes delicious and very quick and easy to make. I found that the cooking temperature and time resulted in the pastry being perfect but the egg filling not quick cooked in the middle. I've then microwaved the pie for 2 minutes to set the filling.  -  21 Mar 2018
