This simple shortcake recipe is easy to make and is baked in a small 20cm flan tin. It is delicious when topped with your favourite fruit.
1/2 cup (60g) self raising flour
1/2 cup (60g) plain flour
1 pinch salt, to taste
1/4 cup (60g) sugar
1/4 cup (60ml) milk
- Preheat oven to 190 degrees C. Grease a flan tin.
- Sift together flours and salt. Cream together butter and sugar. Beat in egg. Mix in sifted ingredients, alternating with enough milk to form a soft consistency.
- Spread mixture into the well greased flan tin. Bake for 25-30 minutes. Allow to stand in the pan for a few minutes before cooling on a wire rack.
When cold, fill with fresh, frozen, tinned or glace fruit. Sprinkle with a little syrup or sweet sherry and decorate with cream.
