Chocolate Fruit Slice

    Cornflakes, coconut, raisins and cocoa baked into a crisp bar then iced with prepared chocolate icing, topped with desiccated coconut then cut into bars.

    Serves: 12 

    • 1 cup corn flakes
    • 1 cup coconut
    • 1 cup self raising flour
    • 1/2 cup brown sugar
    • 1/2 cup finely diced raisins
    • 1 tablespoon cocoa
    • few drops vanilla essence
    • 160g melted butter
    • prepared chocolate icing, to taste
    • desiccated coconut, to taste

    1. Preheat oven to 180 degrees. Line a slab tin with baking paper.
    2. Combine corn flakes, coconut, flour, sugar, raisins, cocoa and vanilla into a bowl. Work in the melted butter and mix well. Press into the prepared tin.
    3. Bake for about 15 minutes then allow to cool. Ice with chocolate icing and sprinkle with coconut or chopped nuts. When icing is set, cut into fingers.
