In a large basin, add All Bran, raisins, mixed peel, lemon rind and sugar. Mix lightly. Add milk then mix until blended. Leave for 2 hours.
Preheat oven to 170 degrees C. Sift together flour and salt then mix in to All Bran mixture. Stir in vanilla. Pour into a well greased and floured tin. Bake 45-60 minutes. Best if left for 2 days before cutting.
