    All-Bran soaked in milk for 2 hours then mixed with dried fruit, mixed peel, lemon rind and brown sugar. Baked until golden brown and allowed to cool before slicing.

    Ingredients
    Makes: 1 loaf

    • 1 cup All-Bran(TM)
    • 1 cup raisins, diced
    • 1 tablespoon mixed peel, diced
    • 1 lemon rind, finely grated
    • 1 cup brown sugar
    • 1 cup milk
    • 1 1/2 cups self raising flour
    • 1 pinch salt, to taste
    • 1/2 teaspoon vanilla

    1. In a large basin, add All Bran, raisins, mixed peel, lemon rind and sugar. Mix lightly. Add milk then mix until blended. Leave for 2 hours.
    2. Preheat oven to 170 degrees C. Sift together flour and salt then mix in to All Bran mixture. Stir in vanilla. Pour into a well greased and floured tin. Bake 45-60 minutes. Best if left for 2 days before cutting.
