Bacon and Egg Muffin

    I love a bacon and egg muffin where the egg yolk is still runny and it doesn’t look like the bacon has been processed to the size of the muffin; so I make my own.

    Serves: 1 

    • 2 rashers of bacon
    • 1 cage free egg
    • 1 muffin
    • tomato sauce

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. In a frypan with a little oil at medium temperature add the bacon and start to cook, when you turn it add the egg. Cook the egg to your preferred style, I like sunny side up.
    2. Half the muffin. Butter one of the muffin halves, add sauce to the other. Stack as follows, buttered muffin, bacon, egg, sauced muffin.
