Beef and Black Bean

    This is one of my favourite standby stir fry dinners and I always keep a jar of black bean paste in the fridge. The vegetables change depending what is available.

    Serves: 4 

    • 500g beef, thinly sliced
    • 1 onion, sliced
    • 2 garlic cloves, crushed
    • 1 carrot, cut into sticks
    • 1 capsicum, diced
    • 1/2 head broccoli, broken into florets
    • 1 cup beef stock
    • 3 tablespoons black bean paste

    1. Heat a wok to hot then stir fry the beef until just cooked (there is no obvious pink), remove from the wok and put aside.
    2. Add the onion and garlic then stir fry until it starts to soften. Add the carrot, capsicum and broccoli, stir fry until it starts to brown.
    3. Add the beef stock, black bean paste and cooked beef, stir to combine the flavours. When it boils turn off and serve with steamed rice.
