The secret to keeping this date loaf nice and moist is dissolving the sugar and plumping the dried fruit in a cup of hot black tea. But isn't that the secret to everything?

Makes: 1 loaf

  • 380g mixed fruit
  • 130g brown sugar
  • 1 cup hot black tea
  • 1 egg, beaten
  • 250g sifted self raising flour
  • 1 teaspoon mixed spice (optional)
  • 1 teaspoon chopped nuts (optional)

Preparation:15min  ›  Cook:45min  ›  Extra time:10min cooling  ›  Ready in:1hour10min 

  1. Preheat oven to 190 degrees C. Grease and flour a loaf tin.
  2. In a basin combine the mixed fruit and the brown sugar. Pour over the hot tea. Leave until cold. Stir in the beaten egg, flour, spice and nuts.
  3. Pour into a loaf tin then bake for 45 minutes.
