Easy Fruit Loaf

    This fruit loaf is so easy to make and it keeps well. It is an easy recipe to remember also, as it uses almost 1 cup of everything. Serve sliced and buttered.

    Makes: 1 loaf

    • 60g butter or margarine
    • 1 cup sugar
    • 1 cup mixed fruit
    • 1 cup boiling water
    • 1 teaspoon bicarb soda
    • 1 cup self raising flour
    • 1 cup plain flour

    Preparation:10min  ›  Cook:1hour  ›  Extra time:10min cooling  ›  Ready in:1hour20min 

    1. Preheat oven to 180 degrees C.
    2. Mix butter, sugar and fruit with boiling water until butter is melted then add the bicarb soda. Allow to cool a little then add the flours.
    3. Pour into a log tin and bake for about 1 hour.
