A rich shortcrust pastry that can be used as a base for quiche, bacon and egg pie, fruit pies, mince tarts, meat pies or anywhere you need to use shortcrust pastry.

Makes: 1 pie case

  • 1 1/2 cups self raising flour
  • 1 tablespoon caster sugar
  • pinch of salt, to taste
  • 100g butter or margarine
  • 1 egg
  • 3 teaspoons water, iced
  • 1 teaspoon lemon juice

Preparation:20min  ›  Ready in:20min 

  1. Mix together flour, sugar and salt. Rub in the margarine until like breadcrumbs. Beat together egg, water and lemon juice then add to the dry mixture.
  2. Refrigerate until firm then roll out thin.
